Beef Koobideh

Ingredients:
- 2 lbs 80/20 ground beef
- 2 tbsp ghee
- 1 yellow onion, grated
- 1 tbsp garlic, minced
- 1 tsp saffron, crushed
- ¼ cup ice cubes
- ½ tbsp coriander
- ¼ tsp turmeric
- 1 tsp black pepper
- ½ tbsp salt
- ½ tbsp smoked paprika
Instructions:
Crush saffron in a bowl and add ice cubes; let steep until ice melts. In a large bowl, combine grated onion, garlic, saffron water, coriander, turmeric, black pepper, salt, and smoked paprika. Mix well. Add ground beef and ghee to the marinade; mix until uniform. Preheat oven to 450°F. Shape the seasoned beef onto skewers, making each kebab 8 to 12 inches long. Press down and pinch the sides with your thumb and fingers to create texture. Arrange on a parchment-lined tray. Bake for 10-15 minutes or until cooked through. Broil for a few minutes for a charred finish. Serve with basmati rice, sumac, and butter.
