Pomegranate No-jito

Keep the Treat, Lose the Calories (and Hangover)

Pomegranate No-jito

  • 1 oz. Fresh Lime Juice
  • 1 oz. Mint Simple Syrup* (recipe to follow)
  • 1 oz. Pomegranate Juice (Tamera uses Pom Wonderful)
  • 8 Fresh Mint Leaves,, plus a Beautiful Mint Sprig for garnish
  • 4 oz. Sparkling Water
  • Lime Slice and Pomegranate Seeds for Garnish

Add to a shaker, fresh mint, mint simple syrup, pomegranate juice, mint leaves and ice.  Shake for 10 seconds then strain into a tall glass over ice. Top with sparkling water and garnish with the lime slice, mint sprig, and pomegranate seeds.  

* For the Mint Simple Syrup:  In a small saucepan, boil 1 cup water, turn off heat, add 1 cup sugar.  Stir until completely dissolved. (It will be perfectly clear when dissolved.)  Add a handful of fresh mint leaves and let infuse for 1 hour.  Strain to remove all mint and keep in a sealed container.  If refrigerated, it will last up to 2 weeks.

Some fun flavor variations:  Replace pomegranate juice with cranberry juice and garnish with fresh cranberries. Try fresh blood orange juice and garnish blood orange slices.
