Starting the day off on my terms is one of the foundational ways I invest in myself. Committing to a very simple morning routine has given me a built-in time each day to connect with myself and prepare for whatever the day may bring!
Getting up just a little earlier than the rest of the family gives me time to journal (always a swamp, bragg, gratitude, desire), move my body (getting my butt kicked on the mats), and, of course,eat.
This granola recipe has been my go-to for over 20 years. I began developing it in my early days of motherhood, when life was happening fast and so much was required of me. It has stood the test of time and is now the #1 requested recipe from my people.
While you can easily make this recipe your own, I love this rendition because it features coconut and honey, reflecting the flavors of our beautiful Big Island.
Ingredients:
- 2 cups gluten-free rolled oats
- ½ cup unsweetened desiccated coconut
- ¼ cup diced pecans
- ½ cup sliced almonds
- ½ teaspoon Celtic Sea Salt
- ¼ cup coconut oil
- ¼ cup grass-fed butter
- 3 tablespoons of honey
- 3 tablespoons maple syrup
- 2 tablespoons water
- 2 teaspoons vanilla extract
Instructions:
- In a large bowl, mix rolled oats, coconut, pecans and sea salt.
- Melt the coconut oil, butter, maple syrup, honey, water, and vanilla extract in a saucepan.
- Pour this over the dry mix and stir well.
- Spread on a lined baking sheet and bake for one hour at 275°F, stirring every 15 minutes. If cooking on multiple trays, rotate the trays each time you stir to ensure even browning.
My favorite way to eat granola is with French yoghurt, Big Island Bees' honey and lilikoʻi. I usually make a quadruple batch—it’s one of the few things I continually keep stocked in my family's kitchen!
