I can’t tell you how many lunch meetings we’ve had at this darling eatery, and I order this bowl every single time. I know, I know, I should try new things. But this bowl is one of those meals I look forward to eating whenever I go! It’s definitely got a hold on me.

Perfect for a lunch or dinner on warm days, it’s fresh and nourishing, without ruining your bikini bod. The crunch of the walnuts paired with creamy goat cheese and bright beets is perfection. It’s an easy make-at-home bowl that you’ll surely have on repeat this summer.

Ingredients:

6 oz mixed baby greens and/or romaine

1 oz pickled red cabbage

2 oz quinoa

2 oz walnuts

2 hard-boiled eggs

2 oz red & golden beets

1/2 sliced avocado 

2 oz crumbled goat cheese

4 oz honey dijon dressing
