Leftover Pulled Pork Tacos

Pile pulled pork on a flour tortilla with lettuce, and top with this simple pico de gallo and a wedge of lime.

Pico de gallo recipe:

1 c seeded diced tomatoes 

2Tbsp minced red onion

2Tbsp chopped cilantro

½ tsp minced garlic

1Tbsp lime juice

½ a jalapeño seeded and diced

⅛ tsp ground cumin

Salt & pepper to taste
