Santa’s Boozy Mint Chip Cookies
Makes about 18 cookies
Ingredients
-
2 cups all-purpose flour
-
½ teaspoon baking soda
-
1 cup granulated sugar
-
½ teaspoon salt
-
½ cup sour cream
-
1 box (3.4 oz) instant vanilla pudding mix
-
½ cup salted butter (one stick), softened
-
1 egg at room temperature
-
1 teaspoon mint extract
-
2 Tablespoons of your favorite whiskey
-
1 cup semi-sweet chocolate chips
-
4 drops green food coloring (optional)
-
10 Andes Mint candies, unwrapped and chopped with a knife to the size of a mini chocolate chip
Instructions
Set oven to 375°F. Cream together sugar and butter in mixer (about two minutes). Mix in egg, sour cream, and pudding mix until incorporated. In a separate small bowl, combine flour, salt, and baking soda. Slowly mix flour mixture into pudding mixture until just combined. Mix in mint extract and whiskey. If you would like green cookies, mix in food coloring. Add semi-sweet chocolate chips and Andes Mints, mixing by hand to incorporate.
Measure cookie dough out into rounded tablespoons (suggestion: use a small 1½ Tablespoon cookie scoop) and place onto cookie sheet covered with parchment paper or silicone mat. Bake in preheated oven for about 11 minutes. Remove from oven and let cookies rest on cookie sheet for about 5 minutes before transferring to cooling rack. Serve on a festive plate for Santa.
