Savoring Spring with Kitchen & Market

Mercer Island’s Small-But-Mighty Grocer Shares Lineup of Crave-Worthy Spring Meals

Hello! Stephanie here. Since opening the doors last fall to the Kitchen & Market Mercer Island location, we have been so humbled and grateful for the open arms and adventurous appetites the community has shown us. And just as things were humming along here, we locked in another future Eastside neighborhood location: Medina, opening the second week of March at the site of the beloved Green Store!

We’re easing out of winter and clinging to those increasingly extra few minutes of daylight (yes!). So naturally, my mind drifts to spring, its colors and all the seasonal deliciousness that comes along with it. I’m excited to share a few of my favorite fresh, flavorful meal kits, lined up for your spring home cooking and entertaining. These meals will be available in-store as well as for home delivery, and the recipes will always be available on our website if you’d like a preview!

First up, our Pomegranate Braised Chicken meal kit: just… W-O-W. This braised chicken will fill your home with divine aromas! Our richly spiced pomegranate braising base reduces down into a shiny glaze that pairs perfectly with its meal kit sidekick: a currant-studded pilaf and a peppery fennel, citrus and arugula salad. A perfect bright spot for a cloudy spring day, this complete meal will generously feed four.

I can’t rave enough about one of Kitchen & Market’s most ardent supporters from the very start, beloved Seattle-area Chef Ethan Stowell. We’re proud to exclusively retail his Ethan Stowell at Home freshly made pastas and the ESR X Mark Ryan wine collection, previously only available at his restaurants.

This spring, look for Ethan Stowell’s Cacio e Pepe, where his pasta prowess is on full display with this stunningly simple cheesy pasta, flecked with lots of cracked pepper. After all, literally translated to “cheese and pepper,” this minimalist entree is like a stripped-down mac and cheese—but extra because we’re talking Ethan’s freshly made spaghetti, our tuxedo pepper mix and plenty of parmesan! Paired with a beet and arugula salad atop a creamy base of ricotta-chèvre, plus a side of marinated olives, you might as well be seated at Ethan’s trattoria, Rione XIII! With just 15 minutes of prep time, this complete meal for four is on the table. Mangia!

Speaking of: Last year Ethan divulged his top-secret Bolognese sauce recipe to us, and this flavor wonder can be yours with the simple twist of a cap! Pick up jars of Tavolàta’s Bolognese (yes, that Tavolàta) at Kitchen & Market anytime with some of his fresh pasta (or as a lasagna shortcut!) and eccolo…the easiest restaurant-quality dinner is served right at home!

And let’s hear it for the one-bowl wonder, one that’s healthy, fresh and flavorful: Our Hearty Rainbow Grain Bowl! You just might make this your meatless Monday (or any day of the week!) go-to. This quick vegetarian meal layers the color, textures, and tastes for a great meal. Warm quinoa and roasted sweet potato provide the base for crunchy pickled vegetables, healthy greens, toppings of cotija and pepitas, and our famous Herby Green Sauce!

All you need from your own pantry are a little olive oil and salt and pepper; everything else under this springy ingredient rainbow is provided. When not in a rush, I like to arrange all of the toppings on a platter, so my family can keep mixing in more pops of flavor as they work their way to the bottom layer of the grains!

Best of all, this meal kit feeds two to three people with just a half-hour of total kitchen time--only 10 of which are active, so there’s plenty of inactive time for cork-popping! I recommend reaching for a slightly chilled bottle of Sauvignon Blanc, Pinot Gris or a dry Rosé to suit.

Spring holidays are always full of so much promise for the season to come, and I’m saving the best for last: our Spring Lamb Feast! With Passover (April 5 at sundown) and Easter (April 9) approaching, Kitchen & Market is your holiday feast destination! What might otherwise be a daylong slog in the kitchen becomes a complete meal for four to six people in just 90 minutes.

This vibrant, all-trimmings-included spread for your friends and family deliciously rings in spring. This dinner is an absolute feast for the eyes and the palate, bursting with herbaceous sauces and greens while showcasing the earthy flavors of tender lamb. The full lineup includes blanched asparagus with basil-parmesan aioli and toasted almonds, a citrusy roasted beet and arugula salad, and a sumptuous rack of lamb with pesto-smashed potatoes. With easy-to-follow steps, this feast may become your new spring tradition!
