What brought you to Gainesville to start Scuola Pizza?
I was living in Gulf Shores, Alabama in 2020 when the Covid restrictions started taking place nationwide. I was originally supposed to open Scuola Pizza there but it seemed no deal could get done regardless of my efforts. I took a trip to Williston, FL to visit the Greek Orthodox Monastery and on my way back stopped by Gainesville. I loved the area and the deal that couldn’t get done in 6 months in Alabama got done in literally one day in Gainesville!
When did you know Scuola Pizza was going to be a success?
Honestly, for the first 18 months, I thought the restaurant wasn’t going to make it. We were struggling in the worst of ways. Deep down however I felt God had brought me to Gainesville for a greater purpose than to just open and close a restaurant. Twice, I was ready to call a meeting to inform the staff that we were going to close but both times in the same week we received a check from the government that kept the restaurant open. After this, I knew it was God’s will that we stay open and that brighter days were ahead for Scuola Pizza. That’s exactly what’s happened.
What personality traits do you think every leader should have?
A leader is one that can successfully help a group of people achieve an aimed goal. No easy task. Outside of being an example for their honesty, hard work, punctuality and much more, the most important trait a leader must have is discernment. This is invaluable when coordinating multiple personalities and individuals with diverse backgrounds. Discernment is no small virtue to have however, and it’s only earned through the grind of many years of service in the given field.
What would you tell your 24-year-old self today?
Talk less, listen more and don’t waste so much time. Time is much more precious than I realized at 24!
Do you have a favorite dish?
Absolutely, Gyro Pita Wrap with Fries will always be my favorite dish and I’d choose it over the most exquisite of 5-star entrees.
