Healthier cooking doesn’t mean complicated recipes or time-consuming cooking.

Breakfast is an important meal. It sets the tone for the entire day and lets your body know how to act, feel, think, and be. Here is a recipe loaded with flavor and nutrients that promotes an anti-inflammatory diet and lifestyle.

Cauliflower & Egg Breakfast Muffins

Ingredients:

5 cups Cauliflower Rice

4 Eggs

½ Red Bell Pepper, chopped

1 cup Baby Spinach, roughly chopped

¼ cup Parsley, finely chopped

½ cup Nutritional Yeast

Salt & Pepper to taste

2 slices Turkey Bacon, cooked (optional)

Directions:

Preheat the oven to 375 and lightly grease a muffin tin.

In a large bowl add the cauliflower rice, eggs, chopped pepper, spinach, parsley, nutritional yeast, sea salt and pepper. Mix well to combine.

Scoop the cauliflower mix into the muffin tin, filling to the top. (if adding) place cooked bacon or turkey bacon on top. Place in the oven and bake for 15-17 minutes. Remove, let it cool slightly and then serve and enjoy!
