On August 28, 2025, guests gathered for an intimate wine dinner that paired the elegance of Sinegal Estate Wines with inventive seasonal dishes from Chef Sam Adams of North End. Presented in partnership with Deep Roots Wine Market, the evening offered limited seating and celebrated the artistry of pairing food and wine.
The evening began with a crisp Details Sauvignon Blanc, North Coast 2022, setting the tone with balance and freshness.
The first course featured Sinegal Estate Sauvignon Blanc, Napa Valley 2022, alongside a seared scallop and stonefruit gazpacho. Layers of peach, plum, and watermelon were brightened with thyme and extra virgin olive oil, creating a dish as vibrant as its pairing.
The Details Cabernet Sauvignon, Sonoma County 2021 then accompanied mushroom-stuffed calamari. Earthy portabella and shiitake mushrooms, combined with spinach, feta, and a rustic tomato ragù, matched beautifully with the Cabernet’s structure and richness.
A playful third course followed—a crispy pork belly taco drizzled with peach glaze and napa slaw, paired with Sinegal Estate Cabernet Sauvignon, Sonoma Valley 2022.
The evening concluded with a decadent sous vide lamb shank served with roasted brussels sprouts, acorn squash, and smoked tomato couscous, elevated by the power and finesse of Sinegal Estate Cabernet Sauvignon, Napa Valley 2021.
