An Arizona native and former pig farmer, Clay’s journey into barbecue started with curiosity and quickly turned into something much bigger. Determined to learn from the best, he traveled to Texas, immersing himself in the techniques and traditions that define true Texas barbecue. From fire management to meat selection and slow-smoking methods, he brought that knowledge back to Arizona, laying the foundation for what Caldwell County BBQ would become.
The name itself carries both personal and cultural meaning. While Caldwell County exists in Texas and holds a strong place in barbecue history, the name also reflects Clay and his wife, Susan’s, family. Susan, who grew up in El Paso, brings her own connection to barbecue traditions, recalling Sundays filled with brisket, family, and time spent gathered around the table. Using their last name felt like a natural way to honor both their roots and the legacy that inspired them.
What sets Caldwell County BBQ apart is its ability to grow while maintaining individuality. Each location has its own distinct personality, from the original Gilbert spot, a converted house where it all began, to the Queen Creek location with its Magnolia-style farm aesthetic, and the Peoria restaurant inspired by Lockhart, Texas. Despite their differences, each space reflects the same dedication to quality, experience, and community.
At the heart of it all is the food. Brisket remains the centerpiece, crafted with patience and precision, while homemade sides like green chile mac and cheese and corn casserole have become staples in their own right. Today, Caldwell County BBQ has expanded across the Valley, including their Mexi-Q concept in downtown Gilbert, while staying true to its roots bringing people together over great food, meaningful tradition, and barbecue done right.
