Something New, Something Wild

The Wild

Tucked into a quiet corner of one of Denver's buzziest neighborhoods and across from the hustle and bustle of Union Station, The Wild is the newest addition to the family of iconic neighborhood hangs including Lady Jane and Hudson Hill, and a haven of craft cocktails, Denver roasted coffee and now, an exquisitely curated wine program. 

Entering the space, you're warmed to the bone by the soft wood tones and natural light. Clean lines and asymmetrical angels guide you through a host of cozy nooks and crannies. So settle in and slow down over a glass, or perhaps a bottle, of something yummy. With a reputation for top-tier cocktail programs, the libations can't be missed. Try the Wild Fashion, the namesake cocktail, which includes a sophisticated mix of Rittenhouse rye whiskey, manzanilla sherry, orange and cardamom. Inquire about the weekly cocktail special as the Wild's truly impeccable bar staff are notoriously skilled. 

The subtle detail and energetic direction of the newest concept is hardly an accident. Jake Soffes, the Denver-based restaurateur, known for the success of The Wild's sister locations, has been quietly building a resume of intentionally detailed spaces centered around the neighborhoods they occupy. Wine-specialist Suzanne Roberts expertly pioneered the first dive into a wine program. A collection of subtle and refined artwork by collaborator Noelle Phares, Denver-based artist and long-time friend of Jake, adorn the walls. UNUM: Collaborative, a Denver-based design and architecture firm, has been involved and dedicated to the build from the beginning. The Wild's newly opened patio exemplifies this special attention by design stadium seating and views of exposed bricks and fire-escapes to keep the warm energy flowing while maintaining the tucked-in feeling evoking a Brooklyn-esque nostalgia of 20th-century city-centers. 

"This is the ethos behind everything we do," Jake says. "It is simply creating great places for people to connect in some of Denver's most distinctive neighborhoods." 

Next time you're crossing town and before (or after) you get swept up by the energy and the hustle of LoDo, drop into The Wild for a repose. Invite the laid-back Denver charm to the nostalgia of the Brooklyn-esque nooks and crannies while you sip on a classic Loire Valley Cab Franc from Olga Raffault, or a funky Central Coast Chenin Blanc from Folk Machine.
