Longmont’s brand spanking new Parkway Food Hall, brought to you by principal architect, Meridian 105 (the design team behind Boulder’s Avanti Food & Beverage) and food hall gurus/operating partners National Food Hall Solutions is the area’s newest culinary hotspot. Baa Hachi
“We’ve been wanting to launch our Japanese street food concept for over a year now, but the cuisine is a bit untested in Longmont, and this gives us a more affordable way to introduce the concept to the community,” says Lisa Balcom of the husband-and-wife team behind Niwot’s Farow. Baa Hachi, one of two new concepts that the Balcoms have brought to Parkway, brings the vibrant flavors of Japanese street food. Drawing on his culinary expertise honed in Michelin-starred restaurants, Chef Adam Chan infuses each dish with authenticity and innovation. From the comforting warmth of Tonkatsu Ramen to the savory delight of Pork Belly Bao Buns, every bite underscores Baa Hachi's commitment to quality and tradition with a twist.
Pie Dog Pizza
Pie Dog Pizza, also from the Farow team, has undergone a remarkable evolution from its origins as a ghost kitchen concept at Farow to its current status as a standalone culinary destination within Parkway. Starting with a special blend of fresh milled, organic heirloom flours from local baking wizards, Moxie, the dough undergoes a three-day fermentation process to achieve optimal flavor and texture. The sauce, made from organic Bianco Dinapoli tomatoes, exudes simplicity yet packs a punch of flavor. With ingredients like locally sourced sausages from Buckner Family Ranch, organic roasted vegetables, and premium pepperoni, Pie Dog pizzas promise an unparalleled pizza experience.
H3sh3r BBQ
A beloved whole hog mobile barbecue catering service and food truck, H3sh3r BBQ has made its first brick-and-mortar mark as a cornerstone of Parkway. Led by Chef Jeff Gebott, known for his commitment to quality barbecue, H3sh3r has brought its signature irreverent vibe to the food hall scene. Guests can indulge in a variety of offerings, from BBQ Nachos smothered in vegetarian green chili to the iconic Heavy Metal Sandwiches featuring prime beef brisket and pulled pork. Wing enthusiasts can delight in award-winning dry-rubbed and smoked beauties. Even if you’re vegetarian, an option like the Tribute Sandwich with smoked jackfruit, invites diners to experience the ultimate barbecue feast.
Chile Con Quesadilla
"We were officially the first vendor to be welcomed on board the Parkway team," shares Christina Richardson, part of the team behind Chile con Quesadilla. "Being a 3-time Top Taco Denver Champion, our flavors are sure to resonate with the diverse tastes of the Longmont community!" When asked about the inspiration behind their culinary concept and its alignment with the food hall's vibe, Christina explains, "Our food is inspired by Colorado Latin roots with a creative American twist. It is not traditional; however, it has a nostalgic home-cooked feel. We pride ourselves on our slogan of 'Love to cook and cook with love.'" As for the unique offerings, patrons can expect anything from traditional Birria Tacos to a Carnitas Mac ‘n Cheese Quesadilla.
Spice Fusion
Under the culinary guidance of Chef Ram Kumar Shrestha, Spice Fusion offers a captivating blend of Indian and Thai cuisine, a creation of the same owners behind Boulder’s esteemed Gurkhas on the Hill. Kalpana Gurung, the visionary founder of Gurkhas, brings a deeply personal touch to her culinary endeavors. Raised in Nepal, Kalpana's roots in hospitality trace back to managing her family's restaurant in her homeland.
Cleaver & Co.
Renowned for its mouthwatering grilled burgers, Cleaver & Co. has landed in its second location at Parkway following the success of its venture in South Denver’s Junction Food & Drink food hall. Among its standout offerings is the Bacon Be Back burger, featuring bacon-habanero jam for a unique blend of sweet, savory and spicy. The loaded tots, topped with the same jam, hot sauce, cilantro crema, and pickles, provide a crunchy yet creamy delight. Complementing these savory delights are thick and creamy milkshakes made with fresh fruit, offering a cool respite from the bold flavors.
Shawarma Shack
Parkway also marks the second location for this beloved Mediterranean concept. HipPOPs is a pioneering mobile dessert concept born from the passion of Anthony (Tony) Fellows, boasting over 30 years of experience in the frozen dessert industry. Tony's vision led to the creation of premium gelato-on-a-stick in which every detail reflects a commitment to excellence. In 2017, HipPOPs expanded to Denver, Colorado, and now Parkway.
