Rock Kitchen's Hot Recipes

Manhattan Clam Chowder                         

2 tbsp olive oil                                                         

1 C carrot cubes                                             

1 C chopped celery

1 C Spanish onion, diced                                  

1/2 tsp fresh thyme                                                 

2 basil leaves                                            

2 C crushed tomatoes                                      

1/2 C chopped red peppers                             

1 C chopped clams                                            

2 C clam juice                                                   

1 C potatoes cut into 2-inch cubes

Salt and Pepper

Combine all ingredients in a large pot and simmer for 30 to 45 minutes.

Healthy Turkey Chili

2 tsp olive oil

1 tsp chopped garlic

1 C Spanish onion, diced

1 C diced celery

1 C diced carrot

1 lb ground turkey

2 C tomato sauce

2 tsp chili powder

1 tsp ground cumin

1 tsp paprika

Combine all ingredients in a large pot and simmer for 30 to 45 minutes.
