SPARKLING CHAMPAGNE CUPCAKES

These cupcakes feel festive, taste amazing, and totally fit the NYE vibe—light, bubbly, and topped with a little sparkle!

Ingredients:

For the cupcakes:

  • 1 box white cake mix

  • 1 cup champagne (or sparkling grape juice for non-alcoholic)

  • ½ cup vegetable oil

  • 3 large egg whites

  • 1 tsp vanilla extract

For the frosting:

  • 1 cup unsalted butter, softened

  • 3–4 cups powdered sugar

  • ¼ cup champagne (or sparkling juice)

  • 1 tsp vanilla

  • Edible glitter or gold sprinkles for topping

Instructions:

  1. Preheat your oven to 350°F and line a cupcake tin with festive liners.

  2. Mix the batter: In a large bowl, combine cake mix, champagne, oil, egg whites, and vanilla. Beat until smooth and slightly bubbly.

  3. Fill liners about 2/3 full and bake for 18–20 minutes, or until a toothpick comes out clean. Let cool completely.

  4. Make frosting: Beat butter until creamy. Add powdered sugar a cup at a time, then pour in the champagne and vanilla. Whip until fluffy.

  5. Decorate: Pipe frosting onto cooled cupcakes and finish with edible glitter, gold dust, or metallic sprinkles for that NYE sparkle.
