Ingredients:
For the cupcakes:

1 box white cake mix

1 cup champagne (or sparkling grape juice for non-alcoholic)

½ cup vegetable oil

3 large egg whites

1 tsp vanilla extract
For the frosting:

1 cup unsalted butter, softened

3–4 cups powdered sugar

¼ cup champagne (or sparkling juice)

1 tsp vanilla

Edible glitter or gold sprinkles for topping
Instructions:

Preheat your oven to 350°F and line a cupcake tin with festive liners.

Mix the batter: In a large bowl, combine cake mix, champagne, oil, egg whites, and vanilla. Beat until smooth and slightly bubbly.

Fill liners about 2/3 full and bake for 18–20 minutes, or until a toothpick comes out clean. Let cool completely.

Make frosting: Beat butter until creamy. Add powdered sugar a cup at a time, then pour in the champagne and vanilla. Whip until fluffy.

Decorate: Pipe frosting onto cooled cupcakes and finish with edible glitter, gold dust, or metallic sprinkles for that NYE sparkle.
