Ingredients:
For the Apple Cake:
- ½ cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 ¼ cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon Gather Holiday Baking Spice or Apple Pie Spice
- ¼ teaspoon salt
- 2 apples, peeled, cored and small dice
- ½ cup walnuts
For the Spiced Whipped Cream:
- 1 cup heavy cream
- 1 pinch sugar
- 1 teaspoon Holiday Baking Spice or Apple Pie Spice
Instructions:
- Preheat oven to 350 degrees. Grease and parchment a 9 x 9 cake pan.
- In a medium bowl, sift together flour, baking powder, holiday spice and salt. Set aside.
- In a large bowl or with a mixer, beat butter and sugar on medium speed until light and fluffy. Beat in eggs, one at a time. Add vanilla.
- On low speed, slowly add in dry ingredients. Stir in apples and walnuts. Spoon into pan.
- Bake for 40-45 minutes, checking at 30 minutes. While cake is cooling, beat heavy cream, sugar and holiday baking spice together until peaks form.
