Easy Recipes for Summer Nights

The only people who want to be in a hot kitchen on a hot day are the ones getting paid for it. So ignore the oven and, go straight to your nice, cool fridge, and whip up something fast and fabulous.

Lemon Velvet Ice Cream

Creamy, sweet, and just the right tart, this incredible ice cream tastes best when softened a bit.

Ingredients

1 quart plus 1 1/3 cups whipping cream

1 quart plus 1 1/3 cups milk

Juice of 8 lemons

4 cups sugar

2 teaspoons lemon extract

1 tablespoon grated lemon rind

Steps

Mix thoroughly and freeze in a 2-quart (or larger) ice cream freezer. 

Ramen Noodle Salad

There are roughly a million recipes for ramen noodle salad. This one is the easiest and the best. If you want color, throw in some shredded carrots, red cabbage, etc., or simply serve it on colorful dishes.

Salad:

1/2 head Napa cabbage, finely shredded

4 green onions, chopped

1/2 cup sliced almonds

Mix together and refrigerate a few hours.

Dressing:

2 tbsp. sugar

3 tbsp. vinegar (white, rice, or apple cider)

1/2 cup vegetable oil

1/2 tsp. pepper

Flavor packet from a package of ramen noodles (chicken)

Combine dressing ingredients and toss with cabbage mixture. Before serving toss with:

1 pkg. Top Ramen noodles, uncooked, crumbled

Serve.
