Delectable Summer Salad

A Cool Strawberry Avocado and Spinach Mix That Delights the Palate

Looking for a simple, unassuming salad for summer gatherings? Try the sweetness of summer strawberries, tossed with fresh spinach, avocado, onions, and pine nuts—drizzled in a light, honey-sweetened balsamic vinaigrette. Then, if desired, top it off with crumbly goat feta. This is sure to be a great side salad to any dish--and a real crowd pleaser at your next summer gathering or barbecue.

Ingredients

1 bag of fresh, organic spinach

1 carton of organic strawberries

2 large Hass avocados, sliced

1 Purple onion

1/3 cup of pine nuts

1 tsp of sumac to season

1/2 cup of balsamic vinegar

1 tbsp of gluten free soy sauce

1/4 cup raw honey

1/4 cup of extra virgin olive oil

Sea salt and pepper to taste

Instructions

Whisk balsamic vinegar, tamari sauce, honey, and olive oil together and store in the fridge until you’re ready to serve the salad. In a serving bowl, assemble spinach, strawberries, avocados and nuts. Drizzle with the vinaigrette and serve!

This recipe is a real hit at neighborhood block parties or barbecues with friends... So you might want to consider doubling the recipe as even those who typically avoid the salad bowl tend to dive in. The flavors complement each other well and it's very easy to make. Enjoy!
