Perhaps one of the best ways to enjoy an incomparable Texas sunset is with a relaxing summer picnic. Some of our favorite local picnic spots include Murrell Park and Twin Coves Park.
Murrell Park offers beautiful views of Grapevine Lake. The park is popular for picnicking, hiking, mountain biking, boating and fishing. Picnic goers can enjoy designated picnic areas, shelters and tables.
Also located on the shores of Grapevine Lake is Twin Coves Park. The park boasts a playground, two large pavilions, volleyball court, horseshoes and a four-hole disc golf course. Enjoy a nice post-picnic walk along the picturesque nature trails.
When it comes to packing the perfect sunset picnic – think simple. Make sure to take into consideration the Texas heat and don’t pack foods that have ingredients that may spoil. Instead, visit your favorite bakery and pick up a baguette or two or some croissants, some bruschetta, good cheese and fruit.
Try this delicious no-bake mason jar cheese cake for a special picnic treat.
Mason Jar Cheesecake
1 1/2 cups graham cracker crumbs
3 Tbsp butter, melted
2 Tbsp sugar for crust
1/2 cup sugar for filling
8 ounce block of cream cheese, softened/room temperature
1 tsp fresh-squeezed lemon juice
1/2 cup heavy whipping cream, whipped
1 tsp pure vanilla extract
1 can cherry pie filling
Mix graham cracker crumbs with melted butter and 2 Tbsp sugar. Distribute evenly into the bottom of six, 8-ounce mason jars.
With an electric mixer, combine cream cheese, lemon juice, vanilla and ½ cup sugar until smooth. Gently fold in whipped cream. Scoop the mixture into the mason jars – on top of the graham cracker crumb mixture. Top with cherry pie filling. Chill overnight. Pack in cooler for picnic.
