Redefining Texas Gastronomy through Food and Wine Education

Imagine a charcuterie board laden with jams, meats, and cheeses sourced exclusively from the Lone Star State, a testament to Texas’ rich gastronomic heritage.

SwigCheeseHaus will soon have a stationary location in Dripping Springs. Owner Jill Johnson created this grab-and-go concept, featuring everything from packaged meats to international delicacies and wines from around the world. Order ahead for a prepared charcuterie board, or stop in for curated wine samplings, olives, and coffee. 

Johnson is a seasoned connoisseur with a passion for wine and food education, and her expertise shines through as she curates experiences that transcend mere consumption, emphasizing the art of pairing and the joy of discovery.

Johnson’s journey began with a passion for travel and studies in Italy. Back home, she champions local wineries and intertwines her love for literature by curating culinary-themed book collections that promote literacy. She also offers immersive wine and food pairing classes through Airbnb experiences. 

As a member of the Les Dames Escoffier Austin chapter and curator of the Wine, Food, Fete during Texas Wine Month in October, Johnson invites all to partake in the vibrant tapestry of Texas’ culinary landscape, where every bite tells a story and every sip sparks conversation.

“During meals, my family and I set aside electronics and focus on tasting and discussing flavors,” Johnson shares.  “Encouraging our children to articulate their thoughts, even if they dislike something, fosters meaningful conversation and enhances their palate. This practice not only promotes good manners and appreciation for what they consume, but also enriches their dining experiences, whether at home or out with others."

In a world filled with distractions, Johnson’s philosophy is simple: Food is not just sustenance but a catalyst for connection—a timeless tradition best shared with loved ones, free from the noise of technology, and enriched by the warmth of genuine conversation.
