Tantalizing Tuna from the Tower Club

Chinese Five Spice Tuna
Ingredients: 
8 oz Tuna Fillet bloodline (cutting or trimming away the dark red or brown strip of muscle running along the fish's spine)
2 oz Teriyaki Sauce 
Five Spice as needed
1 oz Jicama, Julienned
1 oz Green Papaya Shredded
1 oz Arugula
1 oz Cashews
3 oz Asian Vinaigrette
6 Fresno Pepper Rings (crosswise slices of the Fresno chili pepper, a medium-sized hot pepper that is bright red when mature
Sea Salt as needed
Ground White Pepper as needed
Oil as needed
Micro greens Garnish

Method:
1. Heat oil in pan
2. Marinate Tuna in Teriyaki Sauce and season with
Five spice, Salt and Pepper
3. Sear Tuna on both sides Rare to Medium Rare
4. Toss Jicama, Papaya, Cashews and Arugula in
half on vinaigrette.
5. Plate as Pictured

Pair it with Asian vinaigrette-topped greens
1 cup of red pepper 1/8 inch diced
1 cup of red onion 1/8 inch diced
1 cup jalapeno 1/8 inch diced
4 oz fish sauce 
1/4 cup sambal oelek 
1/2 cup chopped cilantro 
2 cups of rice wine vinegar 
1/4 cup of lemon juice 
1/2 cup of olive oil
Sprinkle of brown sugar
