In the heart of Gruene, where live music drifts from dance halls and visitors wander, Winery on the Gruene is quietly redefining what Texas wine can be. When John and Jenifer took ownership in late 2024, the move wasn’t part of a long-term corporate strategy or a polished business plan. It was the result of a life shift, an empty nest, and a desire to build something rooted in passion rather than routine.

After relocating from the Dallas–Fort Worth area to New Braunfels, John discovered the winery almost by accident. What he saw wasn’t a finished product. “I saw potential here,” he shared. Today, that vision has evolved into a fast-growing tasting room experience centered on education, hospitality, and a deep commitment to Texas-sourced wines.

John’s mission is ambitious but clear: “We want to be 80 percent Texas,” he said while adding that the last 20 percent is a curated small selection of world-class wines to elevate the tasting experience. The result is a space where newcomers feel welcome, seasoned wine lovers stay curious, and everyone can discover what they truly enjoy.

For this special feature, John selected a lineup of Cattle Baron Cellars wines designed to capture the flavors, landscapes, and personality of the Lone Star State, one glass at a time.

Tempranillo Texas 2023

This Texas-grown Tempranillo brings together bold fruit, savory depth, and the kind of structure that feels right at home in the Lone Star State. Aromas of black cherry, dried fig, warm spice, tobacco, and cedar lead into a palate layered with plum and cocoa. Firm tannins and balanced acidity keep everything polished, while the finish lingers with confidence. It is a wine that feels rooted in Texas soil, yet refined enough to pair beautifully with grilled meats, smoky dishes, or a slow evening in Gruene.

Sauvignon Blanc Texas High Plans 2024

Bright, crisp, and full of life, this Texas High Plains Sauvignon Blanc captures the refreshment that feels especially welcome in Hill Country heat. Juicy citrus flavors and zesty grapefruit acidity give it a lively edge, while a subtle streak of saline minerality and a whisper of lemongrass add texture and lift. Elegant and beautifully balanced, this lightly oaked Chardonnay highlights the character of Texas High Plains fruit without overpowering it. Cabernet Sauvignon Texas High Plains 2023

Bold and structured, this Texas High Plains Cabernet Sauvignon delivers rich layers of ripe blackberry, baked fig, and black currant from the first sip. Notes of mocha, sweet oak, and graphite minerality unfold through the mid-palate, adding depth and complexity without overwhelming the fruit. Fine-grained tannins carry the wine into a long, polished finish that feels both powerful and refined. It is the kind of red built for Texas evenings. Equally suited for steak dinners, fireside conversations, and slow pours shared among friends.
