It's Peak Season For This Healthy Citrus

January, February and March just happen to fall during the very heart of grapefruit season. Grapefruit are notoriously good for you. Full of Vitamins C and A, there is also a phytochemical called lycopene which has been shown to reduce the risk of certain cancers. Grapefruit is also an excellent source of dietary fiber and contain no fat, sodium or cholesterol. Texas red grapefruit, which is tree-ripened, are naturally sweet and a perfect addition to a winter recipe. 

Fresh Grapefruit Moscow Mule

Ingredients

  • Vodka
  • Freshly squeezed grapefruit juice 
  • Fresh lime juice
  • Ginger beer
  • Fresh rosemary
  • Grapefruit to garnish

Directions

Using a cocktail shaker, combine vodka, grapefruit juice, and lime juice and shake until well mixed. Then you’ll fill a copper mug with ice and add the cocktail mixture to the mug.

To finish, just top it off with chilled ginger beer and give it a brief stir. Garnish with rosemary and grapefruit, serve, and Enjoy!

Shrimp, Avocado and Grapefruit Salad

Ingredients

  • ¼ cup mayonnaise

  • ¼ cup ketchup

  • ¼ cup raw honey

  • 3 tablespoons apple cider vinegar

  • 2 tablespoons diced red onion (Optional)

  • ¼ teaspoon salt

  • freshly ground black pepper to taste

  • ½ cup olive oil

  • 1 (8 ounce) package mixed salad greens

  • 1 avocado - peeled, pitted, and sliced

  • 1 grapefruit, peeled and sectioned

  • 10 cooked and peeled shrimp, or more to taste

  • ¼ red onion, thinly sliced, or to taste (Optional)

Directions

1. Whisk mayonnaise, ketchup, honey, and vinegar together in a bowl. Add diced red onion, salt, and pepper. Place a damp cloth under the bowl to keep from moving; add olive oil very slowly in a stream while whisking. Adjust seasoning if needed.

2. Prepare plates with a bed of mixed greens. Center avocado slices on plates, surround with grapefruit segments, and top with shrimp. Drizzle generously with honey cider salad dressing and garnish with red onion slices.

Healthy Grapefruit Parfait 

Ingredients 

  • 2/3 cup plain or vanilla Greek yogurt
  • 1 small grapefruit, segmented and chopped (see note)
  • 1 teaspoon honey, or to taste
  • 2 tablespoons sliced almonds

Instructions

  1. In a large glass, spoon half the Greek yogurt into the bottom of the glass.
  2. Top with a few pieces of grapefruit.
  3. Add more yogurt and top with more grapefruit.
  4. Drizzle with honey and add almonds on top.
