Thanksgiving Leftovers Transformed

Don't get burnt out on Thanksgiving leftovers, repurpose them into something unique!

There are few meals where the leftovers are looked forward to like the ones after Thanksgiving. Instead of letting leftovers get reptative, try these recipes for a unique twist on Thanksgiving leftovers! 

Sweet Potato Poutine 

Ingredients:

  • 1 bag (20 oz.) sweet potato fries
  • 1 cup leftover gravy
  • ⅓ cup cheese curds
  • Optional: leftover turkey 
  • Optional: ¼ cup leftover cranberry sauce
  • Optional: pomegranate seeds
  • Optional: freshly chopped parsley for garnish

Instructions:

  1. Cook sweet potato fries in an air fryer or the oven according to package directions until they're golden and crispy.

  2. While the fries are cooking, gently warm the leftover gravy and turkey in separate pans.

  3. Placing half of the cooked fries on a serving platter.

  4. Layer half of the cheese curds and the warm turkey slices on top of the fries.

  5. Drizzle half of the gravy over this layer.

  6. Add the remaining fries to the platter, followed by the rest of the cheese curds and turkey.

  7. Pour the remaining gravy evenly over the top, making sure every bite is smothered in savory goodness.

  8. If desired, drizzle the poutine with cranberry sauce, sprinkle with pomegranate seeds and garnish with freshly chopped parsley for a burst of color and freshness. Enjoy!

Leftover Thanksgiving Turkey Stuffing Waffles

Ingredients:

  • 2 cups leftover Thanksgiving stuffing
  • 1 1/2 cups cooked turkey, shredded or chopped
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese (optional)
  • Cooking spray or melted butter, for waffle iron

Instructions:

  1. Preheat your Waffle Iron: Turn on your waffle iron and let it heat up.
  2.  In a large mixing bowl, combine the leftover stuffing, cooked turkey, eggs, milk, and grated Parmesan cheese (if using). Mix well until all the ingredients are evenly combined.
  3. Lightly grease the waffle iron with cooking spray or melted butter to prevent sticking.
  4. Spoon the mixture onto the preheated waffle iron. Use enough to cover the surface but be careful not to overfill, as it might overflow when you close the lid. Close the lid and cook until the waffles are golden brown and crisp.
  5. Carefully remove the waffles from the iron and serve.

Optional Toppings: Serve with leftover cranberry sauce, gravy, or even a fried egg on top for extra flavor.

Tips:

  • If your stuffing is on the dry side, you can moisten it slightly with a little chicken or turkey broth.
  • You can also use this recipe with other leftover holiday sides, like mashed potatoes or sweet potato casserole.
