Whipped Ricotta Toast Board with Roasted Grapes & Hot Honey
Ingredients
For the Board
- 1 French baguette or artisan sourdough, sliced
- 16 ounces whole milk ricotta
- 2 tablespoons extra-virgin olive oil
- 2 cups seedless red grapes
- 2 teaspoons fresh thyme
- 1 tablespoon honey
- ½ teaspoon flaky sea salt
- Fresh cracked black pepper
For Serving
- Hot honey
- Fresh rosemary
- Fresh thyme sprigs
- Toasted walnuts or pecans
- Edible flowers (optional)
- Fig jam
- Extra olive oil for drizzling
Directions
- Preheat the oven to 400 degrees.
- Toss grapes with olive oil, thyme and honey. Spread onto a parchment-lined baking sheet.
- Roast for 20 to 25 minutes until grapes soften and begin to caramelize.
- Meanwhile, whip the ricotta in a food processor for 2 to 3 minutes until smooth and airy.
- Brush baguette slices with olive oil and toast until lightly golden.
- Spread whipped ricotta generously over each toast.
- Spoon roasted grapes over the ricotta.
- Finish with hot honey, flaky sea salt, cracked pepper and fresh herbs.
- Arrange remaining grapes, nuts, fig jam and extra toasted bread on a wooden serving board.
