Dear Kids,
Thank you for the pancakes and bacon in bed last year. You know how much I’ve enjoyed getting that every single year. But you’re getting older and I know how much you love to tackle new challenges, especially when they’re, you know, pretty easy.
So I thought you could make something besides the routine meal. Avocado toast and a berry bourbon cocktail(s) are simple to make and would be perfect for Mother’s Day! The recipes are below.

AVOCADO, FETA & POMEGRANATE TOAST
Ingredients:
Avocados, cut in half, mashed
Fresh Lime Juice
Feta Cheese, crumbled
Pomegranate Arils
Salt and Pepper
Sliced Artisan Sourdough Bread
Preparation:
Mash ripe avocados in a bowl, add freshly squeezed lime juice a little salt (as feta adds a great salty flavor) and fresh ground black pepper. Spread on toast and top with crumbled feta cheese and pomegranate.
AVOCADO & SMOKED SALMON TOAST
Ingredients:
Avocados, cut in half - mash half and slice half
Smoked Salmon, sliced very thin
Freshly Squeezed Lemon Juice
Fresh Dill
Salt and Pepper
Sliced Whole Grain or Pumpernickel Bread
Preparation:
Mash half of the avocados in a bowl, squeeze fresh lemon juice into the mash and season with salt and pepper. Spread on toast, top with sliced avocado, layer with smoked salmon and sprinkle with fresh dill.
BOURBON BERRY SMASH
Ingredients for 1 drink; 4.25 oz:
2 oz bourbon
½ oz lime juice
¾ oz simple syrup
1 oz club soda
6-7 mint leaves, muddled
2-3 blackberries, muddled
Ingredients for 10 drinks; 42.5 oz:
20 oz bourbon
5 oz lime juice
7.5 oz simple syrup
10 oz club soda
60-70 mint leaves
20-30 blackberries
Preparation:
1. In a Boston shaker, combine mint leaves, lime wedges and blackberries. Muddle until pulverized. Add bourbon, ice, and simple syrup (or sugar) and shake vigorously for 10 seconds.
2. Pour full contents into a rocks glass (no straining) and top with 1 ounce of club soda. Stir and garnish with mint leaves and blackberry.
