Janis’ Hot Chicken Salad

Serves 6

Ingredients

1 1/3 cups chopped, cooked chicken

1 can cream of chicken soup (not diluted)

2/3 cup mayonnaise

1 teaspoon lemon juice

2/3 cup diced celery

2/3 cup cooked rice

1/3 teaspoon salt

2/3 cup sliced water chestnuts

Topping:

1 cup cornflakes

1 stick butter

1/8 cup sliced almonds

Directions

1. Preheat the oven to 350°.

2. Combine casserole ingredients in a large mixing bowl.

3. Stir to combine.

4. Pour into a lightly greased 2-quart casserole dish.

5. Combine topping ingredients and sprinkle over top of the casserole.

6. Bake for 25 minutes until bubbly.
