The Foxtail, an independently owned restaurant, quickly became a beloved destination for food lovers, offering a vibrant dining experience inspired by the Mediterranean coast. Fast forward to 2023, and The Foxtail’s reach expanded with the opening of a second location, The Foxtail on the Lake, in Des Plaines. These two lively restaurants continue to delight guests with their fresh, locally sourced ingredients, Mediterranean-inspired cuisine, and a welcoming ambiance that brings people together over great food and craft cocktails.

A Mediterranean Vision, Born in Lebanon

At the heart of The Foxtail’s success is Chef Maya Nahouli, the restaurant's Culinary Director and Managing Partner. Maya's culinary journey began in her homeland of Lebanon, nestled along the Mediterranean’s sun-kissed shores. Growing up with the flavors and ingredients of the Mediterranean, she developed a deep love for seafood, fresh produce, and vibrant spices—passions that would shape her career.

Chef Maya’s work has taken her across the globe, from Italy to Turkey, Lebanon, Romania, and Bulgaria. Each stop along her journey brought new flavors, techniques, and inspirations, but her fondness for the fresh, simple, and bold flavors of her childhood remained constant. With The Foxtail, Maya set out to share those flavors with her guests, bringing the taste of the Mediterranean to every plate, from the freshest seafood to the boldest meze and delicate pastries.

“The Mediterranean way of eating is about connecting with the land, the sea, and each other,” says Chef Maya. “It’s about using high-quality, locally sourced ingredients that are full of flavor and letting them shine.”

A Family Affair in the Kitchen

As The Foxtail continues to grow, so too does Chef Maya’s team. At The Foxtail on the Lake, Chef Maya is joined by Executive Chef Evan Fullerton, who brings over 24 years of culinary experience to the table. Chef Evan’s journey into the world of food started early, as he grew up in a family that celebrated diverse cuisines from around the globe. By the age of 13, he was already cooking meals for his family and helping prepare holiday feasts, instilling in him a passion for bringing people together through food.

Chef Evan honed his skills at The Cooking & Hospitality Institute of Chicago and later at The Western Culinary Institute in Seattle, where he earned his Associate’s degree in Culinary Arts. His extensive experience in kitchens around the world makes him the perfect fit to execute Chef Maya’s Mediterranean vision at The Foxtail on the Lake.

“I’ve always believed that food is a way to connect with others,” says Chef Evan. “When you share a meal, you’re sharing a part of yourself. I’m thrilled to be part of this team and to bring Chef Maya’s vision to life in Des Plaines.”

Chef Evan’s passion for cooking extends beyond the kitchen, where he enjoys spending time with his family, teaching his two young boys the art of cooking. It’s a perfect reflection of The Foxtail’s philosophy—food is about connection, community, and love.

Brunch, Lunch, Dinner, and Everything In Between

Both The Foxtail and The Foxtail on the Lake offer an inviting space to enjoy a meal any time of day. Guests can indulge in a decadent brunch on Saturdays and Sundays, savor Mediterranean-inspired dishes made with the finest local ingredients, or enjoy lunch and dinner throughout the week (except Mondays).
