The Goddess of Greens

Gettin' herby with it!

Green Goddess Dressing makes everything bounce. 

When my daughter Jane moved to Atlanta two years ago (happy me!), she made this dressing for a green salad and I forever pledged my allegiance to this recipe. 

Add the freshest herbs from the farmer's market, produce aisle or your home herb garden. Toss it with tortellini or grilled chicken, or go old school with a green or chopped salad. Store in a mason jar, lid tight, in the fridge. 

Jane's  Green Goddess Dressing

1/3 cup sour cream

Juice of one lemon

salt and pepper, to taste

2 handfuls of arugula or baby spinach

1 handful of parsley, stems included

1 cup herbs - basil, chives, dill. Mix it up.

1/3 cup extra virgin olive oil

Mix all ingredients in a blender or food processor and enjoy. Swap out. your favorite herbs and greens, toss in a clove of garlic and check for seasonings after it sits for a minute or two.  

Store in a jar, up to a week.
