By focusing on high-quality, fresh-caught lobster and a perfectly toasted bun, you create a handheld masterpiece that honors the holiday in the most delicious way possible.

The Ingredients

The Seafood

  • 1 ½ lbs cooked lobster meat (roughly four 1 ¼ lb lobsters). Use a mix of claw, knuckle, and tail meat.
  • Note: Chop the meat into large, bite-sized chunks. Don't shred; you want guests to see the quality!

The Creamy Dressing

  • ⅓ cup high-quality mayonnaise (Duke’s or Hellmann’s is the gold standard here).
  • 1 tbsp fresh lemon juice (plus a little zest for brightness).
  • ¼ cup finely diced celery (this provides the essential crunch).
  • 1 tbsp chopped fresh chives.
  • 1 tsp chopped fresh tarragon (this adds a sophisticated, licorice-like finish).
  • Pinch of sea salt and cracked black pepper.

The Vessel

  • 6 Split-top New England-style hot dog buns.
  • 4 tbsp unsalted butter, softened at room temperature.

The Instructions

  1. Prepare the Lobster: If your lobster meat is cold, pat it gently with a paper towel. Excess moisture is the enemy of a premium roll; it makes the mayonnaise runny. Ensure the meat is chilled but dry.
  2. Whisk the Base: In a large glass bowl, combine the mayonnaise, lemon juice, diced celery, fresh herbs, and spices. Whisk until the dressing is completely smooth and aerated.
  3. The Gentle Fold: Gently fold the lobster chunks into the dressing. You want the meat lightly coated and glossy, not swimming in mayo. Cover and chill in the refrigerator for thirty minutes to let the flavors marry.
  4. The Golden Toast: Heat a cast-iron skillet over medium heat. Spread the softened butter generously on the flat exterior sides of the buns. Grill them until they are golden brown and crispy—resembling a perfect grilled cheese.
