There is something intentional about Sparrow at Trailhead. From the warmth of the dining room to the dishes arriving at the table, the Peoria restaurant was designed to feel elevated without losing the comfort of a neighborhood favorite.
For owner Emily Ganem, that balance was important from the beginning. After seeing the West Valley embrace Squid Ink Sushi, she and Parker recognized an opportunity to create something different: a restaurant equally suited for date night, a milestone celebration, dinner with family or an impromptu evening with friends.
“We wanted Sparrow to feel like part of the community,” Ganem says, with every decision centered around creating a place guests would return to again and again.
In the kitchen, Chef Schuyler Estes brings more than three decades of experience to that vision. His career has taken him through a wide range of cuisines, restaurant openings and leadership roles, but his approach continues to come back to the experience created around food.
“The thing that has never changed is the opportunity to create an experience for someone,” Estes says. “Food has a way of bringing people together, celebrating milestones or simply making an ordinary day a little better.”
His cooking reflects that philosophy. Rather than creating something unexpected simply for the sake of being different, Estes looks for ways to give familiar flavors personality while keeping dishes approachable.
“The food has to make sense,” he says.
That same philosophy is now carrying into Sparrow’s newest offering: brunch. Designed as another reason for guests to gather, the menu balances recognizable favorites with the creativity Sparrow has become known for. Dishes like the Short Rib Benny and Lox Nest bring unexpected touches to brunch classics while remaining comforting and approachable.
“My goal was to create a menu that people would genuinely want to come back for,” Estes says. “There should be a little bit of discovery, but ultimately, the food needs to make you happy.”
Whether gathering for brunch, dinner, cocktails or a celebration, Sparrow’s purpose remains simple: creating memorable food, genuine hospitality and a place people want to experience again.
