October Meal Planning for Healthy Fall Meals and Pumpkin Delights

It’s an exciting month. The house is decorated, the costumes are waiting, the classroom parties organized, and we are gearing up for a slew of fall fun.  

In a busy holiday month, it is especially important to plan ahead and have groceries ready for the week.. Prep easy and healthy meals, knowing that this month will have a lot of sugary treats.

Sharon’s dinner plan for Halloween week:

  • Monday:  Teriyaki chicken thighs, brown rice, Napa cabbage salad 
  • Tuesday:  Spaghetti, green salad
  • Wednesday:  Tostadas with pico de gallo
  • Thursday: Pulled pork and polenta, sautéed kale
  • Friday: Chicken noodle soup, cheddar cheese, apple slices

Make one or more of these pumpkin recipes for the health benefits of pumpkin, and the delicious fall flavors.
