A Classic That’s Come a Long Way from Salt, Shots & Lime

You know the song—that mambo beat, the signature sax. The lyrics, just one low-pitch word … tequila. You’ve probably noticed a wider selection of tequilas at your local watering hole—that’s because this classic spirit is the hot-shot of summer. To talk tequila, we tagged Jake Payzant, assistant GM at Bishop’s Quarter. Wait, what? Aren’t they known for their bourbon selection and New Orleans flare? Oh yes, but there’s more here than meets the eye. In fact, one of their two tequila drinks is the bar’s second best-selling cocktail. 

“We’ve seen an upswing in tequila sales by approximately 30 percent,” Jake smiles. “It’s versatile in the same way that bourbon is.” A spirit distilled from agave, tequila can be enjoyed in its blanco form—it can also be aged in barrels, creating reposado and anejo. Yet each one is different from the next, so it can be used in a variety of cocktails. Making it the perfect summer spirit—if you want to shake things up.

Pineapple Tequila Spritz
1.5oz pineapple juice
.75oz agave
.75oz lime juice
Splash of grenadine
2oz Corazón Blanco Tequila
Prosecco

Add first 5 ingredients to a cocktail mixing tin. Add ice and shake until chilled. Strain into wine glass and add fresh ice. Top with Prosecco and enjoy!

Spice Up Your Life
3 fresh jalapeño slices
1oz passion fruit puree
1oz lime juice
1.5oz Corazón Blanco Tequila
.5oz triple sec

Add 2 jalapeño slices to shaker and muddle thoroughly. Add remaining ingredients, shake with ice until chilled. Strain into a collins glass and garnish with remaining jalapeño slice.
