Two Concepts, One Location

Hammond’s Delicatessen + The Seared Steer: Offering Fresh Smoked Meats and More

After a successful and award-winning 2024, Jered and Deidre Hammond of Chuckwagon 719 saw an opportunity to expand. Their smoked pastrami and steak nights became very popular and the demand inspired two new dining concepts: Hammond’s Delicatessen and The Seared Steer.

“Opening two new concepts allows us to produce even more pastrami and steak, among lots of other new options,” the Hammonds said via email.

To keep up with the demand of three separate dining concepts at two different locations, the Hammonds partnered with Ciera and Zach Romey. The Romeys help to manage the business side of things so the Hammonds can focus on the food. Along with marketing and helping with menu design, the Romeys also help with business and day-to-day operations for the new concepts.

The New Location

The Hammonds teamed up with Trails End Taproom to provide a dining space for their dual concept. Trails End offers a “pay by the ounce” wall of taps where patrons can fill their cups with craft beer, cider, wine or kombucha.

Located just one mile from Red Rocks Open Space and just over a mile from the Garden of the Gods, the location is a perfect spot for refueling after a day of outdoor fun.

Hammond’s Delicatessen

Opening at 11 am Wednesday through Sunday, customers can enjoy the Hammond’s Delicatessen concept until the meats are sold out.

The menu offers a variety of fresh smoked meats such as house-brined pastrami, roast beef, prime rib, brisket, turkey and chicken. Diners can choose from hot and cold sandwich options, rotating scratch-made soups and deli sides, as well as smoked meats by the pound.

If you’re a fan of charcuterie, there is a smoked charcuterie board available all day for both dining concepts. This board features a variety of smoked meats, cheeses, crackers, preserves and more.

The Seared Steer

Open from 4-10 pm Tuesday through Sunday, The Seared Steer requires a reservation to dine.

The menu offers hand-cut steaks, chicken-fried bison, smoked prime rib, baby back ribs and burgers. The steaks and burgers are slow-smoked and then seared over a real wood fire. Sides include baked potato, garlic mashed, fried okra, fried brussel sprouts and bacon green beans.

Enjoy fireside dining indoors and outdoor seating in the warmer months.

Looking to the Future

When asked about future goals, The Hammonds plan to continue focusing on producing quality foods and keeping things fresh with new specials and seasonal options. Eventually, they would love to expand their deli and steakhouse concept to multiple locations.

“The support of this city has been nothing short of incredible,” they said. “We have met so many amazing people and created a bunch of wonderful friendships along the way. We are so thankful for all of it. We love having the opportunity to serve this great city and bring of a little bit of home with us here to Colorado Springs!
