Proprietor Hector Garcia adds a whole new twist to a breakfast favorite. Delivering mouthwatering sweet and savory creations with Belgian Liege waffles as the star attraction, Hector offers a variety of options to the most discriminating waffle lover.
The unique pillowy texture of Belgian Liege waffles comes from the buttery risen dough that has pearl sugars lightly folded into the mixture. The pearls, which are little beads of compressed sugar, are imported from Belgium along with the pure cast-iron skillets used to cook the waffles. But the real magic happens while the waffles cook in the irons; the sugars caramelize, thus creating a sweet exterior crunch while maintaining a warm and soft center.

Waffle Me Up got its start seven years ago in a pop-up tent in Caldwell and Nampa markets. Eventually, the waffle eatery ended up at Boise Farmers Market before moving into its current location. Calling downtown Boise home on Capitol Street, the Capitol building serves as the perfect backdrop. Hector is also expanding to add a new location in Meridian at the intersection of Linder and Chinden, opening September 2019.
