Ashlea Chance from Mavens & Makers has once again provided us with two delicious recipes! A yummy meal to make for your kid, and a tasty treat to fix for yourself! 

Cold Brew Sangria

8oz cold brew coffee

1.5 oz tequila

1 oz orange liqueur

1 tsp simple syrup

1/4 apple, diced, two orange slices

Combine all ingredients, and refrigerate for 30 minutes. Enjoy! 

Greek Chicken Bowl with Easy Hummus

Greek Chicken Nuggets/Bites: 

1lb chicken breast, cubed

1/4c olive oil

1 TBS lemon juice

2 tsp Greek seasoning*

1. Combine chicken, oil, lemon juice, and Greek seasoning in a gallon-sized ziplock bag. Massage to evenly distribute marinade. Let sit for 30-60 minutes.

2. Using a cast iron grill pan, cook chicken over medium-high heat for 2-3 minutes per side until chicken reaches 165 degrees Fahrenheit. 

3. Serve chicken over rice and alongside Easy Hummus. 

Easy Hummus: 

1/4c tahini

1/4c fresh lemon juice

2 TBS garlic-infused olive oil

15oz chickpeas

1/2 tsp salt

1/4 tsp cumin

1. Using a food processor, blend the tahini and lemon juice. Process for one minute, scrap down sides and continue to blend for an additional minute. Tahini should get thick, like a paste. 

2. Add olive oil, salt, and cumin. Process for one more minute. 

3. Drain chickpeas, reserving the aquafaba (or liquid left from the jar). Rinse chickpeas thoroughly before adding them to the food processor. Blend until smooth. Add 3-5 TBS of the reserved liquid to thin hummus to desired consistency. 

4. Serve!
