A Holiday wine-pairing with True Story Wine

First as a salesperson and now as a specialist and winemaker, William Snowden has been participating in the Colorado wine industry for over 25 years. Snowden has had a hand in crafting the wine lists for some of your favorite Boulder restaurants, including Oak on Fourteenth, Jax, the Med, and Brasserie Ten Ten. 

In the early 2000s, some friends encouraged Snowden to take his specialized knowledge in wine and create his own winery; by 2003, he opened True Story Wine.

Since then, Snowden has taken an active part in every step of the process, flying to Oregon several times a year to oversee the creation of a year's wine. With his years of experience crafting wine lists and his own wines, we thought who better than Snowden to turn to when it came time to put together a list of Boulder wine pairings for the Holiday season. 

Lifevine Pinot Noir 

Region: Willamette Valley 

Year: 2017
ALC: 13.5

Tasting notes: dark cherry, ripe raspberry, and wild red plums. The fruit spice balances with the oak spice of vanilla, cinnamon, coriander, and char.
Pair With: Roasted Turkey, tart cranberry sauce, and an autumnal salad with red Anjou pears, salted pecans, shallots, and tossed with a maple syrup vinaigrette. 

Replica Chardonnay Knockoff 

 

Region: California 
Year: 2016
ALC: 13.8
Tasting notes: Tropical fruit, caramel, and spice notes crisply balance full-bodied flavors that echo the nose of this California Chardonnay while adding some yellow stone-fruit flavors.
Pair With: Festive cheese boards with creamy brie-style cheeses. Or pair with the main dish of grilled veal chops with rosemary mushroom sauce. Looking for a veggie option? This wine would also pair well with a pumpkin-stuffed ravioli with a brown buttercream.

True Story Wine Riesling
 

Region: Willamette Valley
Year: 2016
ALC: 13.1
Tasting Notes: The palette is composed of ripe Asian pear with a Meyer lemon finish. A hint of residual sugar provides a touch of sweetness to balance the racy acidity of the wine 
Pair With: A starting course of pumpkin soup, or main courses featuring turkey and sage dressing or crown pork roast with dried fruit.

True Story Wine Pinot Noir
 

Region: Willamette Valley
Year: 2015
ALC: 13.6
Tasting Notes: To the eye, the wine presents a bright ruby hue with luminous highlights. The bouquets is composed of violets, with fruit notes from strawberry’s and rhubarb while there is an undertone of subtle spice. Unusually bright with fantastic texture it lines the pallet with silk and lace. Pleasing tart cherry, a hint of pie spice and dusty tannins lead to a long complex finish.

Pair with: Cornish game hen or butternut squash risotto.
