A Valentine For Your Tummy From Landauer Cafe

RECIPE:

Makes 12 Scones

Ingredients:

2 1/2 cups all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/4 teaspoon salt

4 oz butter, cut up

1/2 cup finely chopped apple

1/2 cup crumbled Stilton cheese

1 egg

1/3 cup applesauce, unsweetened

1/3 cup sour cream

2 tablespoons chopped chives

Milk for brushing

DIRECTIONS

Preheat oven to 400° F.

Line a baking sheet with parchment paper.

In a large bowl stir together flour, sugar, baking powder, and salt. Add butter and mix it with your hands until mixture resembles coarse crumbs. Stir in the apples and the cheese.

In a medium bowl whisk together egg, applesauce, and sour cream. Add to flour mixture and stir until dough is formed

Turn dough out onto a lightly floured surface. Knead gently until smooth. Divide dough in half. Pat or lightly roll each half to a 6-inch circle. Cut each into 6 wedges.

Place dough wedges 3 inches apart on a prepared baking sheet.

Brush with milk and sprinkle with chives. Bake for 12-14 minutes or until golden.

Remove and let cool slightly but serve warm.

Stir 1 teaspoon crushed red pepper into 1/4 cup honey and drizzle over the warm scones.
