ROLL INTO SUMMER

Bring the Flavors of Summer Together with Personalized Tastes of Handmade Rolls

As we roll into summer, fresh vegetables are more abundant at local farmer’s markets. One way to bring the bounty of flavor together is in a spring roll. With a rice paper canvas, and a palette of prepared ingredients, rolls can be personalized to taste and serve as perfect light dinner or appetizer that segues to the summer season.

INGREDIENTS

+ spring roll/rice paper wrappers, (dip and moisten in hot water until tacky, but do not soak)

+ fresh mint or cilantro

+ fresh sprouts or maifun noodles

+ julienned carrots, cucumber, red pepper, avocado, red cabbage

+ fresh mango

+ optional protein: tofu, chicken, shrimp

SAUCY DIPS

01 Peanut Sauce Wisk 1/3 cup peanut butter, 2 Tbs. rice vinegar, 2 Tbs. soy sauce, 2 Tbs. maple syrup, 1 Tbs. toasted sesame oil,  2 cloves pressed garlic. Add 2-3 Tbs. water to desired consistency.

02 Vietnamese Nuoc Cham Sauce Combine 2 Tbs. sugar, 3 Tbs. fresh lime juice, and 1/2 cup water. Add 3 Tbs. fish sauce. Optional: 1-2 tsp. chili garlic sauce/sambal oelek.
