—2 cups granulated sugar
—Zest of three lemons
—10 cups water, divided
—1 pound of strawberries, hulled and sliced
—2 cups fresh lemon juice (about five lemons makes 1 cup of juice)
—Sliced lemon, whole strawberries and fresh mint for garnish
In a small saucepan, create simple syrup by boiling sugar and one cup of water with the lemon zest for five minutes. When finished, cool and strain out the zest.
1. Add sliced strawberries and cooled simple syrup to a blender and blend until smooth. Add remaining water and lemon juice and blend.
2. Pour into a pitcher, cover and chill until ready to serve.
3. Serve garnished with sliced lemon, whole strawberries and fresh mint.
