Chilled Pickled Shrimp

We are letting a River City secret summer recipe out of the bag so that you can spoil the gents in your life with this refreshing, simple shrimp dish sure to make him feel the love. With minimal prep time (10 minutes) and cook time of 5 minutes, all that's left to do is chill (the shrimp), serve and enjoy!

Serves: 6 

Ingredients: 

● 1 pound large shrimp, peeled and deveined 

● 1/2 cup apple cider vinegar 

● 1/2 cup unseasoned rice vinegar 

● 2 tablespoons vegetable oil 

● 1/2 cup water 

● 1 teaspoon kosher salt 

● 1 tablespoon raw cane sugar 

● 1/2 teaspoon chili flakes 

● 1/2 teaspoon brown mustard seeds 

● 1/2 cup dill, chopped 

● 1/4 cup capers with brine 

● 2 shallots, peeled and sliced thin 

● 1 lemon, washed and sliced thin 

1. Bring 6 cups of water to a boil in a saucepan. Add shrimp and cook for 3 minutes, until firm and opaque. Drain and rinse under cold water. Set aside. 

2. In a large bowl, whisk together cider vinegar, rice vinegar, vegetable oil, water, kosher salt, raw cane sugar, chili flakes, mustard seeds, dill, and capers until sugar and salt have completely dissolved. 

3. Place shrimp, shallots, and lemon into a large jar. Pour over brine, making sure shrimp is completely submerged. Cover and refrigerate for at least 24 hours. 

4. Serve lightly chilled or at room temperature.
