Summer is approaching, which means more outdoor activities and social gatherings! And no one wants to show up empty-handed, so try this easy-to-make summer salad everyone will love. 

It's a perfect dish to bring to your next picnic or pool party since everyone is craving something fresh, light and tasty on hot days. This salad is all these things plus the okra adds an extra crunch.

Pickled Okra Salad

Ingredients

  • 4 slices Loveless Cafe Applewood Bacon, cooked
  • 1 jar Loveless Cafe Pickled Okra, sliced
  • 1 medium onion, chopped
  • 1 medium cucumber, diced
  • 1 medium tomato, diced
  • ⅓ cup white sugar
  • ¼ cup liquid from Pickled Okra jar
  • ¼ cup olive oil

Directions

  1. Cook bacon per package instructions making sure it is crispy. Let cool, chop, and set aside.
  2. Cut Pickled Okra, onion, cucumber, and tomato. Place in a medium-size bowl.
  3. In a small bowl, whisk together sugar, liquid from the Pickled Okra jar, and olive oil until sugar is dissolved. Pour this over the vegetables, and toss to coat.
  4. Chill for at least 30 minutes or overnight before serving.
  5. Toss in chopped bacon just before serving.

 Serves 6 to 8
