Hearts of Palm Salad

This unconventional version of a traditional favorite will delight as a salad or sandwich

INGREDIENTS:
2 cans or jars (14 ounces each) organic hearts of palm, drained
1 whole head of organic celery, top greens included, chopped small
1 tablespoon nutritional yeast
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon curry powder
1 teaspoon smoked paprika
½ teaspoon salt
½ teaspoon fresh cracked pepper
1 tablespoon lemon juice
1 tablespoon organic yellow mustard
½ cup organic mayonnaise, or more to taste

TO PLATE:
4 heads of Baby Gem lettuce
1 package (12 ounces) of organic slaw mix
8 ounces of organic mixed sprouts

METHOD:
1) Add drained hearts of palm to a food processor and pulse until roughly chopped, not too fine, to avoid a soggy mixture.
2) In a medium bowl, add the chopped hearts of palm along with the rest of the ingredients and gently mix together until completely combined.
3) Slice the Baby Gems in half and separate them between 4-6 plates. Top each with a little slaw, then add a scoop of the Hearts of Palm mixture. Finish each plate with the sprouts blend.
