Greg and Kari Strimple have spent their lives traveling, and it’s easy to say all of their favorite restaurants are spread across the globe. That was the inspiration for their new restaurant, The Lively.
“They wanted to have their favorite restaurant in this lively environment in Boise, where they wanted to hangout,” says restaurant manager, Amber Ault.
The new building located at 505 W. Bannock will provide a home to The Lively restaurant, Bar Gibbon, and office space for the Strimple’s. From the hand-painted silk wallpaper from London to a “Press for Champagne” button, the attention to detail is a feast for the eyes as you roam through the three-story building.
Edward Higgins, a pedigreed Michelin-starred chef, is the heart of the restaurant, according to Ault.
"I've cooked in Boston, San Francisco, Tokyo, Portland, Hawaii and now, logically, Boise, Idaho,” Higgins said with a grin.
The menu at the Lively leaves guests celebrating the bounty of our local farmers, ranchers, and artisans. Each dish is a modern mixture of carefully sourced local and gourmet ingredients. The current menu features entrees such as the Snake River American Wagyu culotte, and the Idaho Ruby Trout “Rockefeller” with a vermouth butter crust. For those with a sweet tooth, there are currently three mouth-watering dessert options, including the Basque cheesecake with toasted almond cream and fresh berries.
The menu is seasonal and fueled from local sources and ingredients. At the end of the meal, guests will be planning their next visit in order to experience another amazing creation from Chef Higgins, served with gracious hospitality in a lively environment.
