Cranberry is in season! These bright red berries are tart and tantalizing, even their scent is merry and bright. The Queen Creek Olive Mill celebrates this classic winter berry in their Cranberry White Balsamic Reduction, available from their on-site shop or online. Here they provide us with their favorite mouth-watering recipes to compliment your Christmas table. 

Holiday Cranberry Sauce

1 cup of water

1 cup of cane sugar

1 (12ounce) package fresh cranberries, rinsed and drained

1/2 cup of Queen Creek Olive Mill cranberry white balsamic reduction

Juice of 1 orange

1 apple, peeled, cored, and diced

1 pear, peeled, cored, and diced

1/2 tsp. of salt

1/2 tsp. of ground cinnamon

1/2 tsp. of ground nutmeg

Directions:

1. In a medium saucepan boil water and sugar until the sugar dissolves. Reduce the heat to simmer and stir in cranberries, cranberry white balsamic reduction, orange juice, apples, pears, salt, cinnamon, and nutmeg.

2. Cover and simmer for 30 minutes, stirring occasionally until the cranberries burst.

3. Remove from heat and let cool to room temperature. Serve.

Three Chile-Cranberry, Pear & Toasted Pecan Stuffing

16 cups of cubed stale white bread

1 cup of chopped toasted pecans

1 cup of dried cranberries

3/4 cup of 3 Chile Olive Oil

1/4 cup of Cranberry White Balsamic Reduction

2 cups of diced onions

2 cups of diced celery

2 chopped pears

1 Tbsp. of dried sage

1/2 tsp. of dried thyme

1 sprig of fresh rosemary, chopped

1/4 cup of chopped parsley

1 tsp. of sea salt

3 cups of chicken broth

Directions:

1. Toss bread cubes, toasted nuts and cranberries in a large bowl.

2. Heat the olive oil in a large skillet, cook the onions, celery, and pears over medium heat for 2 minutes.

3. Add sage, thyme, rosemary, parsley, and salt stirring, for 2 minutes to blend flavors.

4. Pour mixture over the bread bowl. Drizzle with the chicken broth and Cranberry White Balsamic Reduction and mix lightly.

5. Transfer to a baking dish. Bake, covered, at 375 degrees F, for 30 minutes.

6. Uncover and bake until golden, about 30 more minutes.
