Sun-Kissed Peach and Tomato Delight

Serves: 8 servings (serving size: 1 cup)
Preparation Time: 15 minutes (+30 minutes chilling time)


½ cup thinly vertically sliced red onion
1 pound ripe peaches, pitted and cut into wedges
1 pound heirloom beefsteak tomatoes, cut into thick wedges and heirloom cherry or pear tomatoes, halved
2 tablespoons balsamic vinegar or fresh-tasting vinegar of your choice
3 teaspoons extra-virgin olive oil
2 teaspoons honey
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
½ cup (2 ounces) crumbled feta cheese
4 tablespoons small basil leaves or torn basil


In a large bowl, combine the sliced red onion, peaches, beefsteak tomatoes, and cherry or pear tomatoes. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and black pepper until well combined. Pour the dressing over the peach and tomato mixture. Gently toss to coat all the ingredients. Sprinkle the crumbled feta cheese and basil leaves over the salad. Give it a final gentle toss. Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld together and for a refreshing taste. Enjoy!
