No-Churn Homemade ICE CREAM
When the summer days are hot, a cool treat always hits the spot. Our family loves to pick up in-season berries at the farmers market– because there’s just nothing like a fresh berry salad served over ice cream! The beauty in these recipes is that they are so simple; even the littlest of your little helpers can get in on the mixing. The freezer time can be an agonizing wait for kids, but the reward pays off with a delicious treat that they will be amazed they made themselves.
Ingredients
2 cups heavy whipping cream
1 cup vanilla pudding
1 cup vanilla yogurt
Directions
Whip the cream until stiff peaks form. Fold in pudding and yogurt. Freeze a minimum of four hours before serving. Hint: You can make the pudding from a box mix or keep it really simple and use the snack-sized, pre-made cups. Three snack cups equal one cup pudding!
Summer’s Best BERRY SALAD
What I love about this salad is that the vinegar really gives an unexpected flavor twist that pairs surprisingly well with the berries. The yogurt in the ice cream adds a nice, complementary tang that makes this taste quite adult and sophisticated but is still a big hit with any ice cream and berry-loving child. Take it up another notch by serving alongside angel food cake or drizzling with a nice balsamic reduction!
Ingredients
18 ounces strawberries
6 ounces raspberries
6 ounces blackberries
12 ounces blueberries
2 tablespoons white balsamic vinegar
1 teaspoon honey
1/8 teaspoon cinnamon
Directions
Rinse all berries and allow to drain while hulling and halving the strawberries. In a small bowl, whisk together the balsamic vinegar, honey and cinnamon. Combine berries in a large bowl, pour vinegar mixture over top and gently toss. Best served immediately but will keep in the fridge. Hint: This is a great recipe to use those fun flavored vinegars that may be hiding in the back of your cupboard. Swap out the white balsamic for any fruity, light-colored vinegar you have on hand.
