Berry Panna Cotta

Yields 2 large servings

Prep time: 25 minutes + 2-hour set time

Ingredients

Berry Compote

  • 1 ½ cups mixed berries or berries of choice

  • 1 tablespoon sugar

  • 1 teaspoon lemon juice

Vanilla Panna Cotta

  • 1 cup whole milk

  • ½ cup heavy cream

  • ⅛ teaspoon salt

  • 1 teaspoon vanilla

  • 1 tablespoon sugar

  • 1 teaspoon gelatin 

Directions

  1. In a small saucepan combine the berry compote ingredients. Cook over medium-low heat for 10-12 minutes.

  2. While the compote cooks, start making the panna cotta. Pour ¼ cup of your whole milk into a small bowl and sprinkle with gelatin. Do not stir, let sit while doing the next step.

  3. Combine the heavy cream, salt, sugar, vanilla and remaining milk into a medium-sized saucepan. Cook over medium heat, stirring gently to avoid creating a foam on the surface. 

  4. While the compote is still reducing, bring the cream mixture to a simmer and remove from heat. Add gelatin mixture and whisk gently to combine. Pass through a sieve if available to avoid gelatin clumps in the panna cotta.

  5. Pour milk mixture gently into two stemless wine glasses or ramekins. Cover with cling wrap and refrigerate for 90 minutes. 

  6. Remove compote from the stove and let sit while panna cotta chills. After 90 minutes, gently spoon compote over the panna cotta and let chill anther 30 minutes uncovered. Serve chilled.
