As spring gets into full swing and Mother's Day approaches, a crowd-pleasing appetizer is going to be a must. Whether it's for a party or a picnic, bean salads are a fresh and flavorful addition to any table. Check out this Black Bean & Corn Salad.
Ingredients:
For the Salad:
1 can of black beans
1 can of corn kernals
1 small red bell pepper
1/2 red onion
For the Dressing:
1 1/2 teaspoon of ground cumin
2 tablespoons of hot sauce
1 lime
2 tablespoons of vegetable or olive oil
Directions:
Step 1. Drain, Chop, Juice: Drain and rinse your canned beans and corn using a strainer. Chop and seed your red pepper and onion. Juice the lime and make sure no seeds remain.
Step 2. Combine: Combine the ingredients in a bowl. In a separate bowl, combine the ingredients for the dressing and stir until blended.
Step 3. Toss and Serve: Dress the salad and toss the ingredients together, combining until the salad is completely coated. After that, simply serve and enjoy these amazing fresh flavors!
