In Phase One, Shaun and Brittany Berns and Evan Morris worked with each other at a Schaumburg restaurant. Shaun is the guy who made a name for himself by making some pretty exciting beers. Brittany’s graphic design skills meant a whole series of one-off beer labels were made for Shaun’s creations. Evan’s background in hospitality management meant beer releases were big deals, and the trio started gaining traction.
For Phase Two Shaun moved on to a brewery in Villa Park to build up a roster of beers with Brittany continuing to do label design. As things progressed, Shaun came aboard as general manager. After three years, it was time to see if they could do it on their own.
The team started using space where they are now from the previous owners, LZ Brewing (the second owner after taking it over from the old Blackbelt Brewing). In a span of nine short months, Shaun, Brittany and Evan assembled a whole team helping brew, package and distribute their beer. Phase Three Brewing Co. was officially licensed in 2021, and it has experienced rapid growth. Sampling is available in a remodeled and comfy taproom. Their beer is served in bars and restaurants in Illinois and Wisconsin; it's also sold by a number of retailers, including Binny’s and Garfields.
The owners admit that at times “the ride has been scary and stressful, and extremely fun and satisfying.”
